Welcome New Readers

Please leave a comment about anything, even if not related to food.  I am happy to answer any questions about anything.  If you have any questions that are related to being vegetarian, that is welcome as well.  I will post my new recipe soon and possibly update some photos.

Shepherds Pie

This shepherds'pie is my all-time favourite, it might look daunting but please give it a go! It tastes amazing.
I think you'll love the Quorn (trademark) product, it also comes in chicken-like pieces and has awarded itself the heart foundation tick.  You won't be let down! This freezes really well for a winter warmer at the touch of a microwave.
  • For the filling:
  • olive oil
  • 2 onions, finely chopped 
  • 2 garlic cloves, crushed
  • 2 tsp olive tapenade
  • Half a wombok (Chinese cabbage), shredded
  • 1 red capsicum, sliced
  • 2 carrots, grated
  • 1 medium eggplant, finely chopped
  • 6 button mushrooms, diced
  • 300g Quorn(trademark) mince (from the freezer section)
  • For the topping:
  • About 3 sweet potato, steamed/boiled, mashed
  • Reduced fat tasty cheese, grated, to top
  1. Heat the oil in a large pot.  Add the onions and garlic.  Fry until soft and golden.  Add the olive tapenade and fry off for about a minute, stirring.
  2. Add the rest of the filling ingredients except for the mince.  Cook the vegetables for 3 minutes.  Add the mince and cook for 3 minutes breaking up with the spoon.
  3. When the vegetables are just tender, season it with salt and pepper and pour into a 10-12 cup capacity baking dish.
  4. Season the sweet potato mash and spread over the mixture.  Sprinkle over some cheese and place in a 200ºC oven or 180ºC fan-forced oven.
  5. Bake for approximately 30 minutes and cover with foil if cheese is browning too much.
Serves 6-8
note: Olive tapendae may smell very strong at first, this is normal, once cooked through it has a wonderful flavour. Add more or less of it to suit your taste. Quorn (trademark) mince is the best vegetarian mince available and turns out looking and tasting just like real meat!
Once you've tried this mix of vegetables you can adjust them to your taste.
